How to glaze fish for grilling and BBQ

A simple step-by-step recipe for glazing BBQ fish

Ingredients

To glaze 1 kg of fish for grilling or BBQ, we will need:

• 1 kg – fish;
• Salt, pepper to taste
• 1 sachet of BBQ Thai Style glaze sauce from Katana
• Olive oil
• Additional spices as desired (for example, garlic powder, paprika)

Steps of preparation

1. Fish must be marinated before cooking. Rub the fish with salt, pepper and other selected spices. To add flavor, you can sprinkle the fish with lemon juice. Leave to marinate for 30 minutes to 1 hour in the refrigerator. You can also use BBQ marinades from Katana.
2. Preheat grill or grill pan to medium heat. Lightly brush the grill grate or pan with olive oil to prevent the fish from sticking.
3. Place the fish on the grill, skin side down. Cook uncovered, turning once, for light browning and easy separation of the meat from the bone. Usually it takes about 4-6 minutes on each side, depending on the thickness of the fillet.
4. A few minutes before the fish is ready, apply a thin layer of BBQ sauce for glazing on the meat of the fish. Use a kitchen brush for even distribution. Allow the sauce to set slightly over the heat before applying another layer for a richer bite. Continue to cook the fish until fully cooked, usually another 1-2 minutes, until the sauce forms an appetizing glazed crust.
5. Let the fish “rest” a little on the plate before serving, about 2-3 minutes. Serve the fish hot, garnished with fresh herbs or lemon wedges to add freshness.
